Responsible for overseeing the winemaking and blending processes for all bulk orders, ensuring they meet required standards and specifications. Additionally, responsible for performing various cellar administration tasks in a timely manner.
Ensure the intake of wines aligns with SAWIS and company procedures. Also, responsible for preparing OWS products for loading at other sites, including managing administrative records and communication involved.

- Responsible for cellar preparations and planning in accordance with the agreed-upon schedule for all bulk orders.
- Accountable for preparing wines to meet OWS client specifications for bulk loading, including blending, fining / treating, stabilisation, final adjustments, and tasting profile.
- Ensure that all external samples and analyses meet client specifications, providing feedback to external cellars for necessary adjustments.
- Conduct final tasting and sign-off on wines for export, ensuring complete analysis sheets are approved and signed off by QC before loading.
- Responsible for executing bulk loadings according to company procedures and QC standards.
- Supervise the booking in of all external loading samples in the lab to ensure they meet client specifications. Coordinate with external cellars for loading planning and necessary adjustments to wines according to client specifications.
- Plan all bulk loadings, including scheduling a company vehicle and managing the Cellar Supervisor’s weekly schedule.
- Accountable for all SAWIS documentation related to the cellar, including BG6s, pink cards, and other intake-related documents, ensuring they are completed accurately and submitted on time.
- Ensure timely and accurate completion of intake applications and blending applications.
- Keep cards updated accurately and on schedule.
- Provide the Cellar Admin Clerk with receival WSB numbers promptly and accurately.
- Supply all cards promptly and accurately for submissions.
- Provide all required WSB numbers for bottling accurately and on time to the SAWIS Clerk to apply for seals.
- Conduct SAWIS stocktakes requested internally and/or externally if necessary.
- Maintain the tidiness and organisation of pink cards, SAWIS 6s, and BG6s.
- Responsible for export submissions and relevant documentation.
- Manage work instructions and cleaning records, ensuring they are maintained for traceability.
- Maintain records and documentation of bulk loadings according to internal procedures.
- Adheres to QMS standards and procedures.
- Follows QMS protocol as described by QMS procedures.
- Adheres to the set GMP protocol.
- Participates in various quality seminars.
- Ensures general cellar hygiene is maintained in cellar(s).
- Ensures HACCP principles are adhered to and participates in annual HACCP training.
- Adheres to protective clothing policy.
- Adheres to company and statutory Health & Safety policies and procedures.
- Works closely with the safety representative to ensure adherence to safe work practices.
- Ensures that all equipment, tools etc. provided by the employer are safe and well maintained.
- Attends First Aid and Firefighting Training as supplied by OWS if required.
- Ensures housekeeping is kept in order and meets required standards and all areas of responsibility are clean and neat.
